Hawaiian Ham Casserole

Try this mouth-watering casserole with chunky pieces of pineapple and smoked honey ham, it'll have the entire family running to the dinner table! These days... you might need to send a text message to get them to come down.


2 c. Bobak’s Hunter Smoked Boneless Ham, ½” cubes 2 tbsp. butter 8.5 oz. can pineapple chunks, drained 3 tbsp. dark brown sugar (divided) 1 can onion soup (condensed) salt and pepper, to taste 4 sweet potatoes, boiled, peeled, and thinly sliced ½ c. pecans or walnuts, chopped

Cooking Instructions:

Heat butter in a heavy casserole or ovenproof skillet and brown the ham lightly. Add pineapple chunks, onion soup and 1 tablespoon of the brown sugar.

Season with salt and pepper, to taste. Bring to a boil, then remove from heat. Place sweet potato slices in an even layer over the ham and pineapple mixture, with slices overlapping to make a cover. 

Combine pecans and the remaining brown sugar. Spread this over the sweet potatoes.
