
The company was founded by Frank Bobak. Frank immigrated from Poland to the United States in 1962. As a personal hobby and following family traditions, Frank made sausages with the assistance of his spouse Angeline in their home. After working as a butcher at various meat processing and packing operations, he started his own business as the sole proprietor of Bobak's Sausage Shop in 1967. He rented a storefront located on the north side of Chicago and there he made his sausage specialties and sold them in his retail deli store. As the business succeeded and evolved Frank opened three more deli / sausage shops (an average sized shop was about 1000 square feet) located within the city of Chicago. By 1974, Frank was operating four deli shops with his only factory to make the products being the original storefront operation.
In 1975, Frank opened up a dedicated sausage making facility located in the stock yards neighborhood on the south side of Chicago. This was necessary to keep up with the sausage making demands created by four operating deli / sausage shops. At this time (in 1975), Bobak Sausage Shops was incorporated and became Bobak Sausage Company. The new meat processing location was an Illinois state inspected facility, which meant that not only can the company manufacture and sell its sausage products at the company operated deli locations but additionally a wholesale operation can be started.
The business continued in this configuration with the retail deli locations and a sausage processing location that manufactured products for the companies’ deli shops and limited wholesale business.
By the late 1980s Bobak Sausage Company set its horizons on a larger wholesale market. However, this required a USDA based inspected meat processing facility. As such, a new location was found and a new USDA wholesale operation opened for business in 1989 at the current location of 5275 Archer in Chicago. As limited space was available and to continue in its original core business, a small (2000 square foot) retail deli store was also opened within a few months of the manufacturing plant operation all located in a single multi-use building.
The store was very successful in the 1990s while the USDA wholesale operation also grew steadily. In 1997, Bobak Sausage Company expanded and opened a larger retail store by adding onto the existing building at its present location.
In 1998, the business remodeled what was once the old retail storefront on the original building configuration and opened "Bobak Restaurant Buffet".
In 1999, the business expanded its manufacturing capabilities with an additional 60,000 square foot manufacturing-distribution facility that is immediately adjacent to its original building on Archer Avenue now forming a two building campus environment.
Throughout the company’s history and especially in recent years, Bobak’s has received much public media recognition and exposure in the form of newspaper articles, radio and television exposure featuring our unique business, its great success and growth and the many awards and recognitions that we have achieved. Just to name a few, Bobak’s Restaurant has been named in the “Top 10 Best” of restaurants by Channel 7 ABC TV. Named “Best Deli” by Chicago Magazine and featured on the Food Network’s “Best Of” show where Bobak’s was rated as “best deli” by this popular cable television show. Since 1967, Bobak’s has been well known for its quality products, spectacular customer service and dedication to the community.
